This is one of my favorite meals to fix my family .. not only because it is so tasty and nice on cold days.. but *SO* economically to prepare.
One whole chicken
Can of x-large biscuits (I use store brand Grand Buttermilk)*
flour
salt and pepper
Cut up your chicken (go here to see how to cut up a chicken (http://a1emporium.com/index517.html) ..it is very easy) ... put it in large pot and cover with water (about an inch above chicken) and boil till done (chicken will tear away from bone easily).. remove chicken from pot .. when cool enough to handle, tear it off bone and cut/tear it in bite size pieces.
Cover countertop with floor and lay out biscuits. Roll till 1/8-1/4 inch thick. ..cut in 1-1.5 inch squares. dust top well with flour. Bring broth to boil and start dropping your dumplings in... a few at a time so they won't stick to one another. Make certain that each dumpling has a nice coating of flour as this is what makes it "soupy".. (I dredge each of mine through the flour to make sure it is totally covered) After all are dumped in the broth use a spoon to push them around, making sure they are not sticking together. Boil till done..usually about 15-25 minutes depending on thickness (just do a taste test on them) Put your chicken in and salt and pepper to taste.
*I use 1 and 1/2 cans of Grands buttermilk(store brand) biscuits for my family of 7.
If you see that you don't have enough broth then mix together a little flour and water in a cup to make a thin paste (about a 1/4 a cup) then fill the rest with milk and pour into boiling broth. Do the same thing if your dumplings are not soupy/thick enough. This will thicken it up.
My Grandmother use to make this all the time when I was young.. She use to make her own dumplings until she discovered that the store bought biscuits were actually better.. and much easier.
