I'm feeling really bad about going of the veggie wagon, and Savannah has also expresed an interest in vegetarianism. One of the things that got me eating meat again was the belief that I had caused my hypothyroidism by all the soy foods I ate. My Dr. said it's best to avoid soy altogether. So in my mind that basically means beans, beans, and more beans. If you have soy-free veggie recipes to share, please do!

Thats interesting what you doc said. I'm not sure if I'd believe 100% but the debate is out there on soy now. I had hypothyroidism. I was diagnosed in 1996. I was not a full fledged veggie back then. I was on the meds for a year, no help. My doc was a dimwit. I stopped meds. I converted to all veggie a few years later. I now eat lots of soy mind you. I had my thyroid tested last year. It's fine!! go figure. I never touched soy before just a few years ago. So I know it didn't cause my hypothyroidism.

But anyways I love this recipe

cut up a bunch of potatoes and veggies (whateever you like) put it in a pan w/olive oil. Sprinkle some packaged onion dip over top. Stick in oven about 30 minutes. It's pretty good!

have you ever gone to www.vegweb.com ? it's grat, tons of recipes and they are all rated. so you know that other people have enjoyed them. just do a search for Seitan, wheat meat, rice, or whatever veggies you like best. I absolutly love this site.
