Cooked this lovely lentil soup tonight and everyone was very pleased. The best part...it was so easy and involved minimal clean-up!

Velvet Red Lentil Soup

Ingredients:

2 yellow onions, diced
2 cups red lentils
6 cups water
2-3 vegetable bouillion cubes
1 tablespoon black pepper
1 tablespoon oil (your choice what kind)
salt to taste
Directions:

Sautee the onions in oil in a stock pot. When the onions are done, add the bouillion, water, peppercorns, salt, and lentils. Cover and cook until lentils are soft. Then ladle the soup into a blender or food processor and puree until smooth. This will give the soup its 'velvety' texture. Serve hot.

This recipe is so quick, easy, and satisfying on cold days...

Serves: 8

Preparation time: 30 minutes

do you think regular lentils will be just as yummy? ;) I have never seen red lentils before....

Sounds good, I think I'll try it. I have brown lentils. I am sure it willl still be good! :thumbsup:

In my experience, red lentils are just a tad more mild. I think that with the amount of pepper you're supposed to add that it wouldn't make too much difference. Green lentils should be fine. I wouldn't reccomend using those black lentils though (which frighten me anyhow) as there's more skin than insides and you want the soup to get super mooshy.
