I'm tired of the same old things and thought it would be fun to hear some new ones! Anyone having great breakfasts that are warm and savory?

I find the Boca brand (can I mention brands? Hope so.) breakfast sausages to be quite yummy with my soy latte. Another fave is peanut butter and bananas wrapped in a whole wheat tortilla and stuck in the oven for a few minutes.

We really like the Garden burger brand sausages.. YUMM!! We also make Vegan omlettes (which I admit are just a savory pancake) and do the usual muffins/pancakes/vegan french toast stuff.

I work out in the mornings and when I get home I HATE SWEET which is generally all ANgie makes, so I have taken to whipping up a sausage to go with what she's made which I guess is ok. I just always feel like I am in a rut! Like, the kids lunches always seems so similar, and I want variety for trace minerals but what can you do???

I totally know what you mean. It's tricky getting a variety. It gets hard coming up with something that has some protein in it too...not just for breakfast either. I've been a vegetarian (but ate dairy) forever but just recently had to go vegan due to the milk intolerance of my breastfed babe. I was really surprised how much of my protein had been coming from cheese. At least there are some good soy products out there now to chose from, like Garden Burger, Boca, Morningstar, etc.

I'm always hyper aware of protein too... even though I try to tell myself that Americans eat too much protein I'm still concerned. I make my own Seitan which has added some new variety, and is so dense in protein, but Ephraim may have autism which could mean a gluten free diet, he's already vegan... so I worry about that! I don't want his diet so restricted that he can't eat very freely you know??

I can't believe I've never heard of Seitan before. Is it pretty easy to make? And your kids like it? I found this recipe. Is it similar to what you do? Can you freeze it and use a little a time? I'm intrigued. Hope your little guy is ok.

1 gallon water

1 chunk of ginger

1/2 cup of soy sauce

1 cup gluten flour (also known as high gluten flour,
or 80% gluten flour)

1 to 2 cups warm water

well, it seems like your recipe has too much water in it... I posted my favorite one here:

But, you can find lots of gluten recipes or seitan recipes some are just MUCH more labor intensive and with three little ones I don't ever feel up to all that work! You can freeze it and reuse it. I have only used the sauce in my recipe but I plan on branching out this week with a new broth to bake it in. I got it out of the Vegan Vittles cookbook which I love, The Farm Vegetarian cookbook has one of the harder recipes, but they have other great stuff and LOTS of TVP recipes!

I like grains and sweet things for breakfast, but when I was pg I got dizzy and nauseated if I didn't have a lot of protein first thing in the morning. I eat eggs and dairy, so sometimes I had eggs, yogort, or grilled cheese, but I also found this great recipe in Laurel's Kitchen :

Breakfast Beans

1/2 cup dried whole or split peas
1/4 cup lima beans
1/4 cup garbanzo beans
1 tsp basil
3/4 tsp salt
2 cups water

optional:
1/4 onion, chopped
1 bay leaf

Put it all in a slow cooker at bedtime, and it will be ready in the morning. I bought a little one specifically for this recipe. Thanks for the reminder. I haven't had it in a while. Maybe tomorrow I will.

I have the hardest time with breackfast too. and almond milk (my fav) is just too expensive to put in a bowl of cereal. I don't like oatmeal either... it's a problem. so i've been eating brown rice like oatmeal. i like the texture so much better:) here's a recipe for when i'm feeling indulgent

"apple pie" for breakfast

1 cup cooked plain brown rice
1 tart type apple cubed
1-3 tblsp brown sugar (or your prefered sweetener)
1-2 tsp cinnamon
ginger, cloves, nutmeg, allspice (pumpkin pie seasonings) to taste

optional
soy margerine
almond milk

put rice in a bowl throw everything else on top of it. add some almond/rice/soy milk on top if rice is a little dry. microwave until apples are soft (usually about 2 min)

this can range from just a hint of pie to tasting just like pie depending on how much you season and sweeten it. peaches work pretty well too.

I also do really simple fried rice, smoothies, and "burgers" for breakfast

We make oatmeal, from the whole oats and cook it with raisins. Add some soy or rice or almond milk and maple syrup.

You could also do brown sugar and butter. (the vegan kind)

For winter mornings, some spices of cinnomon and cardoman can help reduce congestion.

if we have time we make breakfast burittos with some tofu, either scrabbled or cubes, gimme lean sausage, and some sauted veggie/greens, and ketchup,yum, ketchup...

if no time, i like whole grain or sprouted bread with almond butter, miso, and either jam or bananas/apples.

or a smoothie with spiruteen,

or chocolate

um...you can tell i am not vegan for health reasons!!

We've been eating these yummy sprouted grain bagels w/ Tofutti cream cheese lately. Those with a cup of java...my ultimate comfort breakfast from my college days. What can I say, I'm a NY girl who's gotta have her bagels, lol!

But for a healthier breakfast we usually have oatmeal with nutritional yeast and dulse or maple syrup and cinammon, whatever we're in the mood for.

I always try to have a fruit of some sort...we belong to a food
co-op and get produce bi-monthly so eating more fruits and veggies has been really easy.

When I was pregnant and nauseous all we had were smoothies! Frozen fruit, soy or rice milk, fruit juice, wheat germ, flax seed, and maybe a scoop of vegan protein powder. The boys loved them.

When company stays over I usually make a vegan coffee cake. I'll dig up the recipe for anyone who is interested.

we mix up the grains - millet is very tasty! - and eat hot cereals often.
and banancakes are a favorite - 1 C flour (whole spelt works or ub wheat too), 1 mashed banana, 1 cup vegan milk (rice,soy,oat), 1 tsp of baking powder - mix wet, mix dry, mix together, cook. Makes enough for my two children and one or two for me. You can double the recipe easily enough.

Vegan Coffee Cake

1 cup vegan milk of your choice
1 TBS apple cider vinegar
1/3 cup tofu
2 1/4 cups whole wheat pasrty flour
1 1/4 cups turbinado or raw sugar
3 tsp cinnamon
1 1/2 tsp ground ginger
1/2 tsp salt
3/4 cup canola oil
3/4 cup chopped walnuts (optional)
1 tsp baking powder
1 tsp baking soda

Blend the milk, vinegar, and tofu in a blender until smooth.
In a large bowl mix the flour, sugar, 2 1/2 tsp of cinnamon, ginger, salt, and canola oil. Using your fingers or a pastry knife mix until crumbly. Put 1 1/4 cups of this mixture in a small bowl along with 1/2 tsp cinnamon and nuts. This is the topping.
Add powder and soda to flour mixture along with tofu mixture from blender. Mix until smooth.
Pour into greased 9x13in baking dish.
Sprinkle crumb topping mixture over cake batter.
Bake in 350 oven for 30-35 minutes until tester comes out clean.
Enjoy!

Breakfast at the Sunlight Cafe, by Molly Katzen, is all breakfast, 1 1/2 inches thick. Beautiful, yummy, thoughtful.

Oh, breakfast tacos are practically de rigeur here. Refried beans, or black beans, scrambled eggs, potatoes, cheese, bacon (fakon), rolled up in a tortilla, and topped with salsa. The salsa makes it good.

I like nasi goreng- fried rice topped with an egg.
