Thumbs up Hot D@mn, is this stuff GOOD! Black Bean and Corn Salad

Got the recipe from MIL and just made my first batch. Yummmmmo, I should have made a double batch!

In a salad bowl combine: 1 red, 1 green and 1 yellow bell pepper (diced), 1/2 cup of red onion (diced), 1 can of corn, 1 clove of garlic (minced), and 1 tsp of cilantro. Toss.

Add 1/4 cup of olive oil, 4 tbsp of red wine vinegar, 1 tsp lime juice, salt and pepper to taste. Toss.

Add 15 oz can of black beans, toss and serve with tortilla chips.

So, soooo good. Mmmm...

I love black beans and corn together! At the coffee shop I work at we make what we call a Santa Fe Salad. We serve all of the below on a bed of lettuce w/grilled Veggie bread.

Here goes:

black beans
corn - sometimes baby corn if we have it
pinto beans
garbanzo beans
kidney beans - if we have them
diced red onion
diced green pepper
diced tomato
sliced black olives
seasoned shredded chicken breast
shredded cheddar cheese
Fiesta Ranch dressing (from Hidden Valley I think)

This stuff is awesome! We've had customers asking for the last two weeks when we going to start our salads (we do them in the spring/summer), so we decided to start them off this week. I had one for lunch yesterday and I'm paying the price today - too many beans,

Oh man, thank you for posting that Meeshi. I made a special trip to the store for ingredients. We polished off an entire batch of it for dinner. Even dh likes it.

We decided it would be awesome in wraps and would be an excellent take-along picnic food wrapped up. It would be good with chicken too. I didn't buy enough peppers to make more but I may just have to stop for some today. It really was super delicious.

Made more this morning (only used 1/2 of each color pepper the first time, so I had enough for seconds) and had it in a wrap with sliced avocado. Ayummy variation!

Yup, we just use either packaged taco seasoning or you could just use your own amounts of cumin, chili pepper, black pepper, season salt, and so on. It really is the best salad.
