I eat a ton of cabbage - rocky pointe tacos (or taco salad).
Ingredients:
Fresh Green Cabbage
Red onion
Cilantro
Fresh Carrots
Fresh lemon or lime
Salsa
Meat of choice

In Rocky Pointe (Puerto Penasco) these are eaten fresh off the taco cart and this is our best attempt at replicating the flavor. Start by tenderizing, marinating and grilling your meat = yes, outdoors on the bbq. Marinate in fajita/italian dressing if you'd like or do a marinade of oil, vinegar and mexican spices.

Chop cabbage, red onion and shred carrots and mix in a large bowl with a handful of fresh diced cilantro.

Either spread your 'salad' into a nice warmed on the grill tortilla or put in a large bowl. Add your meat, some lemon or lime juice and salsa to taste (homemade salsa rocks, but jarred works in a pinch lol).

sometimes I'll do a black bean/corn salsa instead of traditional - just rinse drain a can of black beans, rinse/drain can of corn. Mix. Add a can of diced tomato, some fresh red diced onion, fresh garlic, cilantro, jalepeno. For a more traditional salsa just do diced tomato, jalepeno or chili pepper, onion, garlic, cilantro.

Simple, healthy, low cal/fat and light for summer. I've done it with steak (traditional), chicken, pork and fish.

We love cabbage soup too. I just sautee some onions and add a tiny bit of marinara sauce. Boil a pot of stock - I like beef, but veggie is fine too. Add the onion/butter/marinara and a whatever veggies you have on hand, some fresh garlic and a half a chopped cabbage. Yum. And like 40cals/0 pts per weight watchers.
