Tara's Black Bean Burritos

    A little olive oil in a pan, chop up some onions and garlic, sautee until soft.
    Add in cumin, chili powder to taste, a little salt and pepper.
    Meanwhile, rinse canned beans in colander (or have them precooked/soaked). I used a mix of black beans and kidneys, usually 2:1.
    Dump the beans into the pan with the onions and garlic. Cook until heated through.
    Add in taco sauce or salsa and mash everything up with a potato masher. Keep warm.
    Grate up some cheddar or jack cheese.
    Assemble in tortillas, a sprinkling of cheese topped with a few tablespoons of bean mix, roll up the tortillas and wrap in foil. Easy to reheat in the oven or toaster oven.

    If you want to get fancier, you can add in chopped cilantro or green onions.

    I make these in large batches (like 10-20 at a time). I'll freeze half and keep the rest for lunches or quick dinners-on-the-go.
