Dandelion greens.....

    they are abundant in my yard right now so I'm thinking I'll cook some up :) I have only used them sparingly in the past and mixed with other greens.

    So what are your favorite ways to eat them? I'm thinking with bacon and or butter, hard to go wrong with that :lol:

    Any other ideas?

    My family always just steamed them then put butter and vinegar on then.

    white bean and dandelion soup

    1 bunch dandelion green chopped, tough veins and stems removed
    1 onion chopped
    2 cloves garlic, minced
    2Tbsp olive oil
    2c chopped carrots
    4c veg stock (chicken might work too)
    2c cooked white navy beans (or one can rinsed)
    1 bay leaf
    1Tbsp lemon juice
    salt and pepper to taste

    in a large pot, saute onion and garlic in oil, add carrots and greens and 1 cup water. cover and simmer over low until green wilt. add everything but lemon juice. bring to a boil, reduce heat, cover and let simmer for about 10 minutes. stir in lemon juice, adjust seasonings and serve.

    My MIL boils them and seasons them with garlic and sesame oil.

    Mmmmmmm so many yummy sounding ideas! I probably have enough to try them all :eek: I picked some today but just soaked them and didn't cook them up - we'll try them out tomorrow :)

    I finally cooked some up last night to have with my honey baked lentils. I used a combo of bacon grease and butter then crumbled the bacon over the top :) they were really yummy! Next time I'll chop them first though - they were a little 'stringy'.

    First - there is an article in this month's Mother Earth News about eating dandelions!

    Second - My DH just went around and pulled all of the 'good' ones out of the yard and composted them :vent: See, we have these other weeds - TONS of them - that look somewhat like dandelions but are not tasty and edible and are very prolific and annoying. But they are a bit smaller and harder to pull. So he goes around with our weed pulling gadget thingy and targes all of my delicious ones because they are bigger and an easier target! I lectured him about it and but he thinks they are gross and not a big loss lol Ah well, I'm sure he missed a few ;)
